Radio Silence...

I know, I know. I have been a little absent on the ol blog recently. I just haven't had much to say. My days have been spent working, stressing about working, sleeping, watching movies, and reading. I just haven't had much motivation to blog recently, not much to say...

Not all that exciting.

I do have a quick
for you all however.

I finally got my Proof of Student Status form signed by my University, as well as a letter stating I am officially graduating in April (!!) and have emailed them off to the Disney organisers. So that another thing checked off the list! Next up we should be receiving our "Welcome Packets" in about April-ish. These have all the info on our Visa applications and whatnot, definitely looking forward to these!

Sinead's Cooking Adventures...

The good thing about being home on my days off from work is I have been doing some of the cooking for the family. I have been trying to get more creative and confident with cooking, because if I'm honest I'm pretty average at it. Cooking in the flat for me meant oven wedges or mashed potato. However recently I have whipped up these delicious meals and they have been pretty darn successful if I do say so myself!

And my mum is uber health food concious, so the good thing about these recipes is that they are totally good for you as well :)

Healthy Sesame Chicken - This one I switched the brown sugar for honey, and the chicken stock for vege stock. Was still so so good!

Herbed Greek Chicken Salad - You guys, the yogurt dressing in this is DELICIOUS!

Spice Rubbed Chicken with Cumin-Scented Cabbage - A perfect way to make cabbage a bit more flavourful and interesting.

You may notice a distinct chicken trend... My mum doesn't eat red meat, and I get sick of vegetarian meals, so chicken is our delicious compromise.

Do you have any healthy recipes you think I should try? I'm always looking for new ones!

A Perfect Sunday...

I know, I know. Its Thursday and I'm only just writing about my Sunday, but I have the flu and have had a lot on this week, so I think I can be forgiven...

Sunday brought the first (but probably not the last) O.C marathon/ Dessert party/ Crafty day for Abby and I.
We pigged out on delicious cupcakes, cookie dough dip (which is the best thing ever!), cheesecake and pizza. It was pouring with rain outside and we were covered in blankets. The O.C has got to be one of my all time favs and I find it so comforting watching it over and over. We also got out our crafty bits and pieces and made a few things (photos to come). So all in all it was a perfect day, and we will definitely do it again. Although maybe a little less sugar next time...

I'm working on getting back on top of my blogging schedule. I promise!

A Recipe? Moi?!

I don't know if you guys know me well enough to know that me posting a recipe is strange. But if you did, you would know that I'm not the worlds greatest cook (to put it lightly). Unlike my sister who whipped up these the other day!

Sometimes I can create super delicious treats and other times I don't know how to cook rice (yup that happened, we don't have a rice cooker at the flat!) but don't worry, I have mastered rice now.

I have also mastered this delicious concoction that I created tonight! I'm not sure if it really counts as a recipe as it involves dumping ingredients in a pan and mashing. But it tastes seriously good!

So here we go...

The Best (and easiest) Mashed Potato Ever!

Ingredients
-Potatoes
-Cheese (I used Cheddar and Feta!)
-Bacon
-Lemon Pepper
-Sour Cream
-Whatever else you like!

Instructions
Boil potatoes on the stove, while these boil, brown bacon in a fry pan, grate/slice cheese and get the sour cream and lemon pepper out.

Turn of bacon when it’s done, wait for potatoes to boil (I’m super impatient and they took waaaay too long for my liking!) Drain potatoes; then pile everything into the pot!  You can pick and choose how much of each ingredient you want.

Mash it all together and eat!! Its sooo good and perfect for a student like me!
Enjoy! And let me know if you try it!
